Dainty Dowager

My second popup in Perth, this was a great opportunity to cook in the sister restaurant of my first popup in Perth, at Dainty Dowager.

Working with different chefs and a different team, we put together another 6 course menu

The menu included:
Perch sashimi, cane vinegar cure, spring onion oil, furikake
Roast pork bao, pickled mustard greens, plum sauce
Charcoal octopus, sesame, chilli oil
Tea smoked duck breast, shimeji mushroom, radish cake, duck jus
Charred WA tiger prawns, miso butter, nori, prawn oil
Pandan ice cream sandwich, salted caramel popcorn

This was supported by one of WA’s premier seafood suppliers, Catalano’s Seafood, who have been operating here since 1959. We got to use some of the freshest ingredients on offer which proved for a great evening!
