Huxtaburger Collaboration

Whilst at the Jacob’s Creek Kitchen Collective, I was lucky enough to meet Chef Daniel Wilson. An absolute Australian food icon, The Age 2003 Good Food Guide Young Chef of the Year, who opened Huxtable and creator of the Huxtaburger burger phenomenon. He’s also written two cookbooks, Huxtable and The Huxtaburger Book.

Anyway, we got along really well, and it was just one of those things where something clicked at the same time. I messaged Dan, saying that we should do a limited edition burger, and he replied that funny enough he’d mentioned that to his team that morning during a meeting! This was one of the quickest turnarounds for any of the collaborations, I think it took about two weeks to put together the “Derek Burger”.

The “Derek Burger” consisted of the Huxtaburger signature bun, my fried chicken, kimchi mayo, pickled carrot, daikon & wombok mix, cucumber and Korean chilli sauce.

It was rolled out at all Huxtaburger restaurants Australia-wide, and involved Dan and I doing some promo events around Australia. It’s not every day that you can be proud to say that you have a burger named after you!
