Protein Pumpkin Pie

Ingredients

-        400g pumpkin, diced

-        ¼ cup Optimum Nutrition Vanilla Protein Powder

-        1 tsp ground cinnamon

-        ½ tsp ground nutmeg

-        1 large whole egg

-        ¼ cup caster sugar (or coconut sugar)

-        1 tbsp vanilla essence

-        Whipped cream for topping

-        1 shortcrust pie crust

 

Method

1.     Preheat your oven to 170 degrees Celsius.

2.     Heat a saucepan of water to the boil on the stove, add the diced pumpkin and cook for 8 minutes. Drain, and place the pumpkin into a blender. Blend on high until smooth.

3.     In a stand mixer with a paddle attachment, weigh 400g of pumpkin and add in, add all other ingredients and mix until well combined.

4.     Place into the shortcrust pie crust and bake for 35-45 minutes or until a skewer inserted comes out clean.

5.     Let it cool, slice and serve with whipped cream.
